Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/3 cup powdered sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 cup powdered sugar (for coating)

Instructions

  1. In a large mixing bowl, cream the butter and 1/3 cup powdered sugar until light and fluffy.
  2. Add lemon zest, lemon juice, and vanilla extract. Beat until well combined.
  3. In a separate bowl, whisk together flour, cornstarch, and salt. Gradually add to the butter mixture and mix until a dough forms.
  4. Divide the dough in half. Roll each half into a log about 1.5 inches in diameter. Wrap in plastic wrap and refrigerate for at least 1 hour.
  5. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  6. Slice chilled dough into 1/4-inch rounds and place on prepared baking sheet.
  7. Bake for 10–12 minutes, or until edges are just beginning to turn golden. Do not overbake.
  8. Allow cookies to cool slightly, then toss in powdered sugar while still warm. Cool completely and toss again for a snowy finish.
