Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 2 1/2 cups all-purpose flour
  • Optional: extra lemon zest and powdered sugar for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and lemon juice.
  4. In a separate bowl, whisk together the salt, baking powder, baking soda, and flour.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Scoop out tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  8. Optional: Dust with powdered sugar or top with extra lemon zest before serving.
