In a large bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and lemon juice.
In a separate bowl, whisk together the salt, baking powder, baking soda, and flour.
Gradually add the dry ingredients to the wet mixture and stir until just combined.
Scoop out tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them 2 inches apart.
Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Optional: Dust with powdered sugar or top with extra lemon zest before serving.
