Ingredients

  • 1 medium cucumber, chopped
  • 1 small head of cauliflower, chopped into bite-sized pieces
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup black olives, sliced
  • 1/2 cup mozzarella cheese cubes
  • 1/4 cup Italian dressing (keto-friendly)
  • Salt and pepper, to taste

Instructions

  1. Place the chopped cauliflower in a microwave-safe bowl and microwave for 2-3 minutes until just tender. Allow to cool.
  2. In a large bowl, combine the cucumber, cherry tomatoes, red onion, black olives, and mozzarella cheese.
  3. Add the cooled cauliflower to the bowl.
  4. Pour the Italian dressing over the salad and gently toss to combine.
  5. Season with salt and pepper to taste.
  6. Refrigerate for at least 30 minutes before serving for best flavor.
