Ingredients

  • 2 sirloin steaks (about 10 oz each)
  • 1 lb Yukon Gold potatoes, cut into wedges
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • 2 oz arugula
  • 1 oz shredded Parmesan cheese
  • 2 tbsp mayonnaise
  • 1 tbsp white wine vinegar
  • 1 tbsp water
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Toss potato wedges with olive oil, oregano, salt, and pepper. Spread evenly on baking sheet and bake for 25-30 minutes, flipping halfway.
  3. In a small bowl, whisk together mayo, vinegar, water, mustard, garlic, and a pinch of salt and pepper for the dressing.
  4. Season steaks with salt and pepper. Heat a skillet over medium-high heat and cook steaks for 3-4 minutes per side, or to desired doneness. Let rest.
  5. In a mixing bowl, toss arugula with the dressing and top with Parmesan.
  6. Slice steak and serve with oven fries and salad. Garnish with parsley if using.
