Ingredients

  • 1/2 cup cooked quinoa
  • 1/2 cup canned chickpeas, drained and rinsed
  • 1/2 cucumber, chopped
  • 1 tomato, chopped
  • 1/4 red onion, thinly sliced
  • 1/4 avocado, sliced
  • 2 tbsp crumbled feta cheese
  • A handful of fresh parsley, chopped
  • Juice of 1/2 lemon
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 tsp crushed red pepper flakes (optional)

Instructions

  1. Place the quinoa in a serving bowl.
  2. Top with chickpeas, cucumber, tomato, onion, avocado, and feta cheese.
  3. Sprinkle with chopped parsley and red pepper flakes if using.
  4. Drizzle lemon juice and olive oil over the bowl.
  5. Season with salt and pepper to taste.
  6. Toss gently before serving and enjoy immediately!
