Ingredients

  • 1 pound large shrimp, cooked and chilled
  • 2 cups diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1 jalapeño pepper, seeded and finely chopped
  • 1 large avocado, diced
  • 1 cucumber, peeled and diced
  • 1/2 cup ketchup
  • 1/4 cup fresh lime juice
  • 1/4 cup Clamato or tomato juice
  • Hot sauce, to taste
  • Salt and freshly ground black pepper, to taste
  • Tortilla chips, for serving

Instructions

  1. In a large bowl, combine diced tomatoes, red onion, cilantro, jalapeño, avocado, and cucumber.
  2. Add ketchup, lime juice, and Clamato juice; stir well.
  3. Fold in the chilled shrimp.
  4. Season with hot sauce, salt, and black pepper to taste.
  5. Cover and refrigerate for at least 30 minutes before serving.
  6. Serve cold with tortilla chips.
