Ingredients

  • 1 cup almond flour
  • 2 tbsp melted butter
  • 8 oz cream cheese, softened
  • 1/4 cup granulated erythritol
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/2 cup diced apples
  • 1/2 tsp cinnamon
  • 1 tbsp maple syrup (sugar-free)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix almond flour and melted butter to form a crust. Press into the bottom of each muffin cup.
  3. In a bowl, beat cream cheese, erythritol, vanilla, and egg until smooth. Pour over the crust.
  4. In a separate bowl, mix diced apples, cinnamon, and maple syrup. Spoon over the cheesecake batter.
  5. Bake for 18-20 minutes until the center is set. Let cool before serving.
