Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
Mix almond flour and melted butter to form a crust. Press into the bottom of each muffin cup.
In a bowl, beat cream cheese, erythritol, vanilla, and egg until smooth. Pour over the crust.
In a separate bowl, mix diced apples, cinnamon, and maple syrup. Spoon over the cheesecake batter.
Bake for 18-20 minutes until the center is set. Let cool before serving.
