Ingredients

Brownie Base

  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Mint Frosting

  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon peppermint extract
  • Green food coloring, optional

Chocolate Ganache

  • 3/4 cup semi-sweet chocolate chips
  • 3 tablespoons unsalted butter

Instructions

Prepare Brownie Base

  1. Preheat oven to 350°F and line an 8x8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar.
  3. Add eggs and vanilla extract, whisking until smooth.
  4. Stir in cocoa powder, flour, salt, and baking powder until just combined.
  5. Spread the batter evenly into the prepared pan and bake for 20–22 minutes.
  6. Remove from oven and let cool completely.

Make Mint Frosting

  1. In a bowl, beat softened butter until creamy.
  2. Add powdered sugar, milk, and peppermint extract. Beat until fluffy.
  3. Tint with green food coloring if desired.
  4. Spread frosting evenly over the cooled brownie layer.
  5. Refrigerate for 20 minutes to set.

Prepare Chocolate Ganache

  1. Melt chocolate chips and butter together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  2. Pour ganache over the mint layer and spread evenly.
  3. Chill brownies in the fridge until set, about 1 hour.
  4. Slice and serve.
