Preheat the oven to 375°F (190°C).
In a large bowl, mix sour cream, mayonnaise, salt, and pepper.
Add diced potatoes, crumbled bacon, green onions, and 1 1/2 cups of cheese to the bowl. Mix well.
Transfer the mixture to a greased 9x13-inch baking dish.
Sprinkle the remaining 1/2 cup of cheese over the top.
Bake uncovered for 1 hour or until the potatoes are tender and the top is golden brown.
Let it rest for 5 minutes before serving.
