Ingredients

  • ½ cup unsalted butter, melted
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1½ teaspoons peppermint extract
  • Green food coloring (optional)
  • 2 cups graham cracker crumbs
  • 1 cup semisweet chocolate chips
  • 2 tablespoons butter

Instructions

  1. In a large bowl, combine melted butter, powdered sugar, milk, peppermint extract, and a drop of green food coloring if desired.
  2. Stir in graham cracker crumbs until well mixed.
  3. Press mixture firmly into a greased or parchment-lined 8x8-inch baking dish.
  4. In a microwave-safe bowl, combine chocolate chips and butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  5. Pour melted chocolate over the mint layer and spread evenly.
  6. Refrigerate for at least 2 hours or until set.
  7. Cut into bars and enjoy!
