Mix with melted butter and press into a 9x13-inch dish to form the crust. Chill in the fridge.
In a bowl, beat softened cream cheese with sugar and vanilla until smooth. Fold in Cool Whip.
Spread the cream cheese layer over the crust and return to fridge.
Dissolve peach Jello in 1 cup boiling water, then stir in 1/2 cup cold water. Let it sit at room temp for 30 minutes.
Stir chopped peaches into Jello mixture and pour over cream cheese layer. Refrigerate until set (1-2 hours).
Whisk pudding mix with milk until thickened. Fold in Cool Whip and spread over the Jello layer.
Top with whipped cream and peach slices if desired. Chill for 2 more hours or overnight before serving.
