In a large bowl, combine the flour, yeast, and salt.
Add warm water and stir until a shaggy dough forms.
Cover the bowl with plastic wrap and let the dough rise at room temperature for 12-18 hours, until doubled and bubbly.
Preheat your oven to 450°F (230°C). Place a Dutch oven (or heavy pot with a lid) inside as it heats.
Turn the dough out onto a floured surface. Shape gently into a ball.
Carefully remove the hot pot, place the dough inside, and cover.
Bake covered for 30 minutes, then remove the lid and bake for another 15-20 minutes until golden and crusty.
Let cool before slicing.
