Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (14 oz) can diced tomatoes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 lb potato gnocchi
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large skillet or pot over medium heat, cook the sausage until browned. Drain excess fat if needed.
  2. Add diced onion and cook until softened, about 3 minutes. Stir in minced garlic and cook for 1 minute.
  3. Pour in diced tomatoes, chicken broth, heavy cream, Italian seasoning, salt, and pepper. Stir well and bring to a simmer.
  4. Add the gnocchi and cook according to package directions, usually about 5 minutes, until tender.
  5. Stir in fresh spinach and Parmesan cheese until the spinach wilts and the sauce is creamy.
  6. Serve immediately, garnished with extra Parmesan if desired.
