Melt dark chocolate chips in the microwave or using a double boiler.
Dip each stuffed date halfway into the melted chocolate.
Place the dates on parchment paper and sprinkle with sea salt if desired.
Chill in the refrigerator for about 10 minutes, until chocolate is set.
