Line an 8x8-inch baking dish with parchment paper.
In a mixing bowl, combine Greek yogurt, peanut butter, maple syrup (or honey), vanilla extract, and a pinch of salt. Mix until smooth and well incorporated.
Gently fold in the mini chocolate chips.
Spread the mixture evenly into the prepared baking dish and smooth the top.
Sprinkle crushed peanuts over the top if using.
Freeze for 3–4 hours or until firm.
Remove from the freezer, lift out the parchment paper, and cut into bars.
Store in an airtight container in the freezer until ready to enjoy.
