Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Unroll the pizza dough and use a pumpkin-shaped cookie cutter to cut out an even number of shapes.
On half of the pumpkin cutouts, spread a spoonful of pizza sauce, sprinkle mozzarella, and top with mini pepperoni slices.
Cover each topped pumpkin with another dough cutout. Press the edges together with a fork to seal.
Brush each pumpkin with egg wash and use a knife to lightly carve pumpkin lines on top (optional).
Place a small piece of green bell pepper at the top for a pumpkin stem.
Bake for 12-15 minutes or until golden brown and puffed.
Let cool slightly before serving. Enjoy warm!
