Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 pint cherry tomatoes
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1/2 cup marinara sauce
  • 4 oz pepperoni slices
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large ovenproof skillet, heat olive oil over medium heat.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Stir in cherry tomatoes, red pepper flakes, oregano, salt, and pepper. Cook for 5-6 minutes until tomatoes burst.
  5. Add white beans and marinara sauce, stirring to combine.
  6. Layer pepperoni slices over the bean mixture and top with mozzarella cheese.
  7. Transfer skillet to the oven and bake for 10-12 minutes, until cheese is bubbly and golden.
  8. Garnish with fresh basil before serving.
