Ingredients

  • 4 boneless skinless chicken thighs
  • 3 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon white vinegar
  • 4 garlic cloves, minced
  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, whisk together olive oil, soy sauce, lime juice, vinegar, garlic, paprika, cumin, oregano, salt, and pepper.
  2. Add the chicken thighs and toss to coat evenly. Cover and marinate in the fridge for at least 30 minutes, preferably overnight.
  3. Preheat the oven to 425°F (220°C). Place the chicken on a baking sheet lined with parchment paper.
  4. Bake for 25-30 minutes, or until the chicken is cooked through and nicely browned.
  5. Serve hot with your favorite sides like rice, salad, or roasted vegetables.
