In a large bowl, whisk together olive oil, soy sauce, lime juice, vinegar, garlic, paprika, cumin, oregano, salt, and pepper.
Add the chicken thighs and toss to coat evenly. Cover and marinate in the fridge for at least 30 minutes, preferably overnight.
Preheat the oven to 425°F (220°C). Place the chicken on a baking sheet lined with parchment paper.
Bake for 25-30 minutes, or until the chicken is cooked through and nicely browned.
