Ingredients

  • 1 cup thick poha (flattened rice)
  • ½ cup rice flour
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped
  • 1-inch ginger, grated
  • 2 tablespoons cilantro, chopped
  • 5-6 curry leaves, chopped
  • ½ teaspoon cumin seeds
  • Salt, to taste
  • Water, as needed
  • Oil, for frying

Instructions

  1. Rinse the poha in water, drain well, and let it rest for 10 minutes.
  2. In a large bowl, mash the soaked poha and mix in rice flour, onions, green chili, ginger, cilantro, curry leaves, cumin seeds, and salt.
  3. Add just enough water to form a soft dough.
  4. Heat oil in a deep frying pan over medium heat.
  5. Take small portions of the dough, flatten into vadas, and gently slide them into the hot oil.
  6. Fry until golden brown and crispy on both sides, then drain on paper towels.
  7. Serve hot with chutney or ketchup.
