Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup pumpkin puree
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1/4 cup honey

For the Honey Cinnamon Butter

  • 1/2 cup butter, softened
  • 2 tbsp honey
  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 375°F and grease a baking dish.
  2. In a bowl, whisk together cornmeal, flour, baking powder, salt, brown sugar, cinnamon, and nutmeg.
  3. In another bowl, mix pumpkin puree, eggs, milk, melted butter, and honey.
  4. Gradually combine wet ingredients into dry ingredients and mix until smooth.
  5. Pour batter into the greased baking dish and bake for 25-30 minutes until golden brown.
  6. For the honey cinnamon butter, mix softened butter, honey, and cinnamon until creamy.
  7. Serve the warm cornbread with honey cinnamon butter.
