Ingredients

For the Pumpkin Cupcakes

  • 1 box yellow cake mix
  • 1/2 cup oil
  • 1/2 cup milk
  • 4 eggs
  • 1 cup pumpkin puree
  • 2 teaspoons pumpkin pie spice

For the Cream Cheese Swirl

  • 8 oz cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F and line muffin tins with cupcake liners.
  2. In a large bowl, combine cake mix, oil, milk, eggs, pumpkin puree, and pumpkin pie spice. Mix until smooth.
  3. In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
  4. Fill cupcake liners 2/3 full with pumpkin batter.
  5. Add a spoonful of cream cheese mixture on top of each cupcake and swirl gently with a toothpick.
  6. Bake for 17–20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool completely before serving.
