Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup shredded red cabbage
  • 1/2 cup shredded carrots
  • 1/2 avocado, sliced
  • 1/2 cup edamame, cooked
  • 1/2 cup cucumber, sliced
  • 1/2 red bell pepper, sliced
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tsp maple syrup
  • 1 tsp soy sauce
  • Water to thin the dressing

Instructions

  1. Arrange the quinoa as the base in a large bowl.
  2. Top with red cabbage, carrots, avocado, edamame, cucumber, and bell pepper.
  3. In a small bowl, whisk together tahini, lemon juice, maple syrup, soy sauce, and a little water until smooth.
  4. Drizzle the dressing over the bowl and serve immediately.
