Ingredients

  • 8 ounces soba noodles
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 2 scallions, thinly sliced
  • ½ cup chopped cilantro
  • ¼ cup toasted sesame seeds
  • 2 tablespoons sesame oil
  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon grated fresh ginger
  • ½ teaspoon maple syrup
  • Sea salt, to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the soba noodles according to the package instructions. Drain and rinse under cold water to stop cooking.
  2. In a large bowl, whisk together the sesame oil, tamari, rice vinegar, lime juice, ginger, and maple syrup.
  3. Add the noodles to the bowl and toss to coat.
  4. Add the cabbage, carrots, scallions, cilantro, and sesame seeds. Toss again.
  5. Season to taste with sea salt and serve.
