Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons tomato paste
  • 3 cups beef broth
  • 2 cups frozen mixed vegetables
  • 2 cups frozen shredded hash browns
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned, breaking it up as it cooks.
  3. Stir in chopped onion and garlic; cook until soft and fragrant.
  4. Season with salt, pepper, paprika, and thyme.
  5. Stir in Worcestershire sauce and tomato paste until well combined.
  6. Pour in beef broth and bring to a boil.
  7. Add frozen vegetables and hash browns; simmer for 10–15 minutes.
  8. Stir in heavy cream and cheddar cheese until melted and creamy.
  9. Serve hot, garnished with fresh parsley if desired.
