Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 12 oz smoked sausage, sliced
  • 1 cup quick grits
  • 4 cups water
  • 1 cup shredded cheddar cheese
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Bring 4 cups of water to a boil in a saucepan. Stir in the grits and reduce heat to low. Cook for 5-7 minutes, stirring occasionally, until thickened.
  2. Remove from heat, stir in butter and cheddar cheese. Season with salt and pepper. Cover and keep warm.
  3. Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and cook until browned, about 4-5 minutes.
  4. Add shrimp to the skillet along with Cajun seasoning and garlic powder. Cook until shrimp are pink and opaque, about 3-4 minutes.
  5. Spoon cheesy grits into bowls, top with shrimp and sausage mixture.
  6. Garnish with chopped parsley if desired and serve immediately.
