Ingredients

  • 2 pounds stew beef, cut into bite-sized pieces
  • 1.5 pounds baby potatoes, halved
  • 5 tablespoons unsalted butter, melted
  • 5 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh chopped parsley, for garnish

Instructions

  1. Place the beef and halved potatoes in the slow cooker.
  2. In a small bowl, whisk together melted butter, garlic, Italian seasoning, onion powder, salt, and pepper.
  3. Pour the butter mixture over the beef and potatoes and toss to coat evenly.
  4. Cover and cook on low for 6–8 hours or on high for 4 hours, until the beef is tender and potatoes are cooked through.
