Ingredients

  • 4 boneless skinless chicken breasts, cut into bite-sized pieces
  • 1/3 cup flour
  • 1 tablespoon oil
  • 1/2 cup orange marmalade
  • 1/2 cup BBQ sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon fresh ginger, grated (optional)

  • Chopped green onions, for garnish
  • Cooked rice, for serving

Instructions

  1. Toss chicken pieces with flour until well coated.
  2. Heat oil in a skillet over medium-high heat. Brown the chicken on all sides (you don’t need to cook it through).
  3. Place the browned chicken in the slow cooker.
  4. In a bowl, whisk together the orange marmalade, BBQ sauce, soy sauce, ginger, and red pepper flakes.
  5. Pour the sauce over the chicken and stir to coat evenly.
  6. Cover and cook on low for 4–5 hours or on high for 2–3 hours, until chicken is fully cooked and tender.
  7. Serve over cooked rice and garnish with chopped green onions.
