Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 (15 ounce) can white beans, drained and rinsed
  • 1 (15 ounce) can corn, drained
  • 1 (4 ounce) can diced green chilies
  • 3/4 cup chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste
  • 1 (8 ounce) package cream cheese, softened
  • Optional toppings: shredded cheese, cilantro, avocado, tortilla strips

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Add the white beans, corn, green chilies, chicken broth, and all the seasonings.
  3. Stir gently to combine, cover, and cook on low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken directly in the pot using two forks.
  5. Add the cream cheese and stir until completely melted and smooth.
  6. Serve hot with your favorite toppings like shredded cheese or tortilla strips.
