Heat olive oil in a skillet over medium heat.
Add the crumbled tofu and cook for 5–7 minutes, stirring occasionally, until slightly browned.
Meanwhile, blend chipotle pepper, adobo sauce, salsa, tomato paste, smoked paprika, cumin, oregano, soy sauce, maple syrup, salt, pepper, and water until smooth.
Pour the sauce over the cooked tofu and stir to coat evenly.
Simmer for 10–12 minutes until the tofu has absorbed most of the sauce and is thick and flavorful.
Serve hot in bowls, tacos, or burritos.
