Ingredients

  • 1 block (14 oz) extra-firm tofu, pressed and crumbled
  • 1 tablespoon olive oil
  • 1 chipotle pepper in adobo sauce
  • 2 tablespoons adobo sauce
  • 1/2 cup salsa
  • 1 tablespoon tomato paste
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon maple syrup
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the crumbled tofu and cook for 5–7 minutes, stirring occasionally, until slightly browned.
  3. Meanwhile, blend chipotle pepper, adobo sauce, salsa, tomato paste, smoked paprika, cumin, oregano, soy sauce, maple syrup, salt, pepper, and water until smooth.
  4. Pour the sauce over the cooked tofu and stir to coat evenly.
  5. Simmer for 10–12 minutes until the tofu has absorbed most of the sauce and is thick and flavorful.
  6. Serve hot in bowls, tacos, or burritos.
