Ingredients

  • 3/4 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup granulated sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  3. Mix in molasses and egg until fully combined.
  4. In a separate bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Scoop tablespoon-sized portions, roll into balls, and coat in granulated sugar.
  7. Place on prepared baking sheets, spacing 2 inches apart.
  8. Bake for 8–10 minutes or until edges are set but centers remain soft.
  9. Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
