In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
Stir in flour and salt, then knead for 5 minutes until a smooth dough forms.
Cover and let the dough rise in a warm place for 1 hour until doubled in size.
Preheat oven to 425°F. Line a baking sheet with parchment paper.
Cut dough into bite-sized pieces. Bring a pot of water and baking soda to a boil.
Drop pretzel bites into the boiling water in batches for 30 seconds. Remove with a slotted spoon.
Place boiled pretzel bites on the baking sheet. Sprinkle with coarse salt.
Bake for 12–15 minutes or until golden brown. Let cool slightly before serving.
