Ingredients

  • 2 large flour tortillas
  • 1 cup cooked chicken, shredded
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/4 cup red bell pepper, diced
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1 tbsp lime juice
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a bowl, mix the cooked chicken, black beans, corn, bell pepper, cheese, sour cream, lime juice, chili powder, cumin, salt, and pepper.
  2. Lay a tortilla flat and spoon half of the mixture onto the center.
  3. Fold in the sides, then roll the tortilla tightly from bottom to top.
  4. Repeat with the second tortilla.
  5. Slice each wrap in half and serve immediately.
