Preheat oven to 400°F (200°C). Line a baking dish with foil.
Season chicken thighs with salt and pepper. Place them skin-side up in the baking dish.
In a bowl, whisk together hoisin sauce, honey, and soy sauce.
Pour half of the sauce over the chicken and bake uncovered for 25 minutes.
Remove from oven, spoon remaining sauce over the chicken, and bake for another 10-15 minutes until the skin is golden and sticky.
Serve hot with your favorite sides like rice, noodles, or vegetables.
