Ingredients

  • 12 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, diced
  • 1/2 cup yellow bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Italian dressing
  • Salt and pepper, to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the cherry tomatoes, bell peppers, red onion, black olives, and feta cheese.
  3. Add the cooled pasta to the bowl and toss gently.
  4. Pour the Italian dressing over the salad and mix until well coated.
  5. Season with salt and pepper to taste, then sprinkle with fresh parsley.
  6. Chill in the refrigerator for at least 30 minutes before serving.
  7. Serve cold and enjoy!
