Ingredients

  • 1 ½ pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 cup cornstarch
  • 3 large eggs, beaten
  • ¼ cup vegetable oil
  • 1 cup sugar
  • ¼ cup ketchup
  • ½ cup distilled white vinegar
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon garlic powder

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Season chicken pieces with salt and pepper.
  3. Coat each piece of chicken in cornstarch, then dip in beaten eggs.
  4. Heat oil in a large skillet over medium-high heat. Sear chicken on each side until golden but not cooked through.
  5. Transfer chicken to a 9x13-inch baking dish.
  6. In a medium bowl, whisk together sugar, ketchup, vinegar, soy sauce, and garlic powder.
  7. Pour sauce over chicken and toss to coat evenly.
  8. Bake uncovered for 1 hour, turning the chicken every 15 minutes to keep it coated in sauce.
