Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
Pat the chicken wings dry with paper towels. Toss them in a bowl with baking powder, salt, and pepper until evenly coated.
Arrange the wings on the rack in a single layer. Bake for 40–45 minutes, flipping halfway through, until golden and crispy.
Meanwhile, in a saucepan over medium heat, combine honey, sriracha, soy sauce, vinegar, garlic, and ginger. Bring to a simmer and cook for 3–5 minutes until slightly thickened.
Transfer baked wings to a large bowl. Pour the sauce over and toss until fully coated.
Sprinkle with sesame seeds and green onions, if desired. Serve immediately.
