Ingredients

  • 2 cups pecan halves
  • 14 oz bag soft caramels, unwrapped
  • 2 tablespoons heavy cream
  • 12 oz semi-sweet chocolate chips
  • 1 tablespoon coconut oil (or shortening)

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. Place pecan halves in small clusters (3–4 pieces) on the baking sheet.
  3. In a microwave-safe bowl, combine caramels and heavy cream. Microwave in 30-second intervals, stirring in between, until smooth.
  4. Spoon a small amount of caramel over each pecan cluster and let it set for about 10 minutes.
  5. Melt chocolate chips with coconut oil in a microwave-safe bowl, stirring every 30 seconds until fully melted and smooth.
  6. Spoon melted chocolate over each cluster to cover the caramel and pecans.
  7. Allow the clusters to cool and set completely at room temperature or refrigerate briefly until firm.
