Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced red onion
  • 1/2 cup chopped cilantro
  • 1 jalapeño, sliced
  • 1 avocado, diced
  • Sour cream or Greek yogurt, for serving

Instructions

  1. Preheat the oven to 425°F and line two baking sheets with parchment paper.
  2. Slice sweet potatoes into thin rounds using a mandoline or sharp knife.
  3. Toss sweet potato slices with olive oil, cumin, chili powder, garlic powder, paprika, salt, and pepper.
  4. Arrange slices in a single layer on baking sheets and bake for 20 minutes, flipping halfway through, until crispy.
  5. Layer baked sweet potato chips on a large platter.
  6. Top with black beans, shredded cheese, red onion, and jalapeño slices.
  7. Return to oven for 5-7 minutes until cheese melts.
  8. Finish with avocado, cilantro, and dollops of sour cream or Greek yogurt.
