Ingredients

  • 1 pound flank steak
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 2 tablespoons mayonnaise
  • 1 tablespoon pickled jalapeño juice
  • 1/2 teaspoon sugar
  • 1/2 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder

Instructions

  1. Season the steak with salt and pepper.
  2. Heat oil in a skillet over medium-high heat and cook the steak until desired doneness, about 3-4 minutes per side. Let rest, then slice thinly.
  3. In a small bowl, mix mayonnaise, jalapeño juice, sugar, cumin, paprika, cayenne, onion powder, and garlic powder to make the quesadilla sauce.
  4. Spread the sauce over half of each tortilla. Add a layer of cheese, sliced steak, and more cheese, then fold over.
  5. Cook the quesadillas in a clean skillet over medium heat until golden brown and cheese is melted, about 2-3 minutes per side.
  6. Slice into wedges and serve warm.
