Ingredients

For the Cake Bites

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/3 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup sour cream
  • 1 large egg

For the Chocolate Frosting

  • 1/4 cup unsalted butter
  • 2 tbsp unsweetened cocoa powder
  • 3 tbsp milk
  • 1 1/2 cups powdered sugar
  • 1/2 tsp vanilla extract

Instructions

For the Cake Bites

  1. Preheat oven to 350°F and spray a mini muffin pan with nonstick spray.
  2. In a saucepan, combine water, butter, and cocoa powder. Bring to a gentle boil while stirring.
  3. In a large bowl, mix flour, sugar, baking soda, and salt.
  4. Add the cocoa mixture into the dry ingredients and stir to combine.
  5. Mix in sour cream and egg until batter is smooth.
  6. Fill each muffin cup about 2/3 full with batter.
  7. Bake for 10-12 minutes or until a toothpick comes out clean. Let them cool slightly.

For the Chocolate Frosting

  1. In a saucepan, melt butter with cocoa powder and milk. Stir until smooth.
  2. Remove from heat and whisk in powdered sugar and vanilla until frosting is thick and glossy.
  3. Spoon or drizzle the frosting over the warm cake bites and allow to set before serving.
