Ingredients
For the Pasta
8 oz linguine
2 tbsp olive oil
2 cloves garlic, minced
1/4 tsp crushed red pepper flakes
1 cup cherry tomatoes, halved
1 lb lobster tails, cooked and chopped
1/4 cup white wine
1/2 cup heavy cream
1/2 cup freshly grated Parmesan cheese
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions
Step 1
Cook the linguine according to package instructions. Drain and set aside
reserving 1/2 cup of pasta water.
Step 2
Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes
cooking until fragrant
about 1 minute.
Step 3
Add cherry tomatoes to the skillet and cook until softened
about 3 minutes.
Step 4
Stir in the lobster meat and cook for another 2 minutes. Pour in the white wine and simmer for 2 minutes.
Step 5
Add the heavy cream and Parmesan cheese to the skillet. Stir to combine
allowing the sauce to thicken
about 5 minutes.
Step 6
Add the cooked linguine to the skillet
tossing to coat the pasta with the sauce. If the sauce is too thick
add reserved pasta water until desired consistency is reached.
Step 7
Season with salt and pepper to taste
and garnish with fresh basil before serving.
