Cook tortellini according to package instructions. Drain and set aside.
In a large skillet, cook bacon over medium heat until crispy. Remove and drain on paper towels.
In the same skillet, sauté minced garlic in bacon drippings for 1 minute.
In a bowl, whisk together egg yolks, heavy cream, Parmesan cheese, and black pepper.
Reduce heat to low, add tortellini to the skillet, and slowly pour in the egg mixture, stirring constantly.
Add cooked bacon and mix well until the sauce thickens.
Season with salt to taste and garnish with fresh parsley before serving.
