Ingredients

For the Dough

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil or melted ghee
  • 1/2 teaspoon salt
  • 6 tablespoons water (more if needed)

For the Filling

  • 2 large russet potatoes, peeled and diced
  • 1/2 cup green peas (fresh or frozen)
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon grated ginger
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon chili powder
  • Salt to taste
  • 2 tablespoons chopped cilantro
  • 1 tablespoon lemon juice

For Frying

  • Vegetable oil for deep frying

Instructions

For the Dough

  1. In a large bowl, mix the flour, salt, and oil until crumbly.
  2. Gradually add water and knead into a smooth, firm dough. Cover and let it rest for 30 minutes.

For the Filling

  1. Boil potatoes until fork-tender, then drain and mash.
  2. Heat oil in a skillet, add cumin seeds and ginger, and sauté for 1 minute.
  3. Add peas, cooked potatoes, and all spices. Stir well and cook for 3-4 minutes.
  4. Add cilantro and lemon juice. Mix well and let cool.

To Shape & Fry

  1. Divide dough into small balls. Roll each ball into a thin oval, cut in half.
  2. Form a cone with each half, seal edge with water.
  3. Fill cone with potato mixture, seal edges well.
  4. Heat oil in a deep pan to 350°F (175°C). Fry samosas in batches until golden and crisp.
  5. Drain on paper towels and serve warm.
