Ingredients

  • 1 package of rice paper wrappers
  • 1 cup red cabbage, shredded
  • 1 cup carrot, julienned
  • 1/2 cucumber, julienned
  • 1/2 red bell pepper, thinly sliced
  • 1/2 yellow bell pepper, thinly sliced
  • 1 avocado, sliced
  • 1/2 block of tofu, sliced and pan-fried
  • Fresh mint leaves
  • Fresh cilantro
  • Rice noodles, cooked and drained

Instructions

  1. Prepare all vegetables, tofu, and rice noodles before assembling.
  2. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 5 seconds until soft.
  3. Lay the wrapper on a flat surface and arrange a small portion of noodles, veggies, herbs, and tofu in the center.
  4. Fold in the sides and roll tightly like a burrito. Repeat with remaining ingredients.
  5. Serve with your favorite dipping sauce.
