Prepare all vegetables, tofu, and rice noodles before assembling.
Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 5 seconds until soft.
Lay the wrapper on a flat surface and arrange a small portion of noodles, veggies, herbs, and tofu in the center.
Fold in the sides and roll tightly like a burrito. Repeat with remaining ingredients.
Serve with your favorite dipping sauce.
