Ingredients

  • 12 rice paper wrappers
  • 12 cooked shrimp, sliced in half lengthwise
  • 4 oz vermicelli noodles, cooked
  • 1 cup shredded lettuce
  • 1/2 cup shredded carrots
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro
  • 1/2 cup fresh basil
  • 1/2 cup cucumber strips
  • 1/4 cup crushed peanuts (optional)
  • Warm water (for softening wrappers)

Instructions

  1. Fill a large shallow dish with warm water.
  2. Dip one rice paper wrapper into the water for about 10-15 seconds, until soft.
  3. Place the softened wrapper on a clean surface.
  4. Arrange 2 shrimp halves in the center of the wrapper.
  5. Add a small portion of vermicelli noodles, shredded lettuce, carrots, cucumber, mint, cilantro, and basil on top.
  6. Fold the sides of the wrapper inward, then roll tightly from the bottom up.
  7. Repeat the process with the remaining wrappers and ingredients.
  8. Sprinkle with crushed peanuts if desired.
  9. Serve immediately with a dipping sauce of your choice.
