Ingredients

  • 12 ounces rotini pasta
  • 1 cup crumbled feta cheese
  • 1/2 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse with cold water.
  2. In a blender or food processor, combine feta cheese, Greek yogurt, olive oil, and lemon juice. Blend until smooth and creamy.
  3. In a large mixing bowl, combine the pasta, cherry tomatoes, cucumber, red onion, olives, and parsley.
  4. Pour the whipped feta dressing over the pasta mixture and toss until evenly coated.
  5. Season with salt and pepper to taste before serving.
