Ingredients

  • 4 large eggs
  • 1 cup zucchini, grated
  • 1/4 cup onion, diced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup corn kernels
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  3. Add grated zucchini and corn. Cook for 2-3 minutes to release moisture.
  4. In a bowl, beat the eggs and mix in the cheese, salt, and pepper.
  5. Add sautéed vegetables to the egg mixture and stir to combine.
  6. Pour the mixture back into the skillet and cook over medium heat until edges set.
  7. Transfer the skillet to the oven and bake for 8-10 minutes or until fully set.
  8. Slice and serve warm.
