Ingredients

  • 3 medium zucchini, sliced lengthwise into thin strips
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • 1 cup marinara sauce
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Lay the zucchini strips on a paper towel to remove excess moisture.
  3. In a bowl, mix ricotta, Parmesan, mozzarella, egg, garlic powder, and Italian herbs.
  4. Spread marinara sauce on the bottom of the baking dish.
  5. Place a spoonful of the ricotta mixture onto each zucchini strip and roll it up.
  6. Arrange the rolls in the baking dish and top with remaining marinara sauce and mozzarella.
  7. Bake for 25 minutes or until cheese is melted and bubbly.
  8. Garnish with fresh basil and serve warm.
