Ingredients

  • 1 lb elbow macaroni
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1 cup heavy cream
  • 4 cups sharp cheddar cheese, shredded
  • 2 cups mozzarella cheese, shredded
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika (optional)
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Cook macaroni according to package instructions. Drain and set aside.
  3. In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes.
  4. Slowly whisk in milk and cream until smooth. Cook until thickened, about 5 minutes.
  5. Stir in cheddar and mozzarella cheeses. Mix until melted and creamy.
  6. Season with salt, pepper, and paprika if using.
  7. Add cooked macaroni to the cheese sauce and stir to combine.
  8. Pour mixture into prepared baking dish. Top with breadcrumbs if desired.
  9. Bake for 25-30 minutes, or until bubbly and golden on top.
