Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground paprika
  • 1 tablespoon ground coriander
  • 1 tablespoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Pita bread, for serving
  • Tomatoes, sliced
  • Red onions, sliced
  • Garlic sauce or tzatziki, for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix garlic, cumin, paprika, coriander, turmeric, cinnamon, cayenne, salt, pepper, olive oil, and lemon juice.
  3. Toss the chicken thighs in the marinade until fully coated. Let sit for at least 20 minutes, or overnight for more flavor.
  4. Place the chicken on a baking sheet and roast for 25-30 minutes, or until fully cooked and slightly crispy on the edges.
  5. Let the chicken rest for a few minutes, then slice into thin strips.
  6. Serve in warm pita bread with sliced tomatoes, red onions, and garlic sauce or tzatziki.
