Toss the chicken thighs in the marinade until fully coated. Let sit for at least 20 minutes, or overnight for more flavor.
Place the chicken on a baking sheet and roast for 25-30 minutes, or until fully cooked and slightly crispy on the edges.
Let the chicken rest for a few minutes, then slice into thin strips.
Serve in warm pita bread with sliced tomatoes, red onions, and garlic sauce or tzatziki.
